"By using organic rice miso as a starter, lactic acid bacteria and yeast that go well with miso are added, which helps stabilize the flavor. Use the leftover miso in miso soup, etc.
Because you make it from scratch, you will feel a special attachment to the finished miso. Because it is made from 100% koji (malt) and soybeans in a 1:1 ratio, the miso is well-balanced and versatile, and goes well with a variety of dishes.
Recommended way to eat
You can start eating it as early as six months after preparation. (The period may vary depending on the storage environment and the season.)
We recommend eating it after one year of aging, and finishing it within two years. Enjoy the changes in color and flavor of the miso as it ages.
