This is a special miso that can only be brewed in years when the ingredients are available. It has a deep flavor that comes from being aged for three years.
Fertile soil and clean water are the products of the magnificent nature at the foot of the Yatsugatake Mountains. Rare soybeans and rice are grown here using "natural cultivation" methods that maximize the inherent power of plants. Furthermore, this special miso is made using our special "Ishigaki Salt."

In order to make the most of the power of the carefully selected ingredients, we steam the rice and soybeans to make miso, then let it sit in a wooden barrel for over a year.

We use soybeans and rice that are grown in the magnificent natural environment at the foot of the Yatsugatake Mountains, with fertile soil and clean spring water, without the use of fertilizers or pesticides, using natural cultivation methods that bring out the inherent power of the plants and soil.
Crops grown without fertilizer have deep roots that absorb nutrients from the soil on their own. This draws out their powerful vitality and stores highly nutritious nutrients in their bodies. In addition, we only use "Ishigaki Salt", which is made in Japan using a special flat kiln method. We use carefully selected ingredients.
Recommended way to eat
It has a strong umami flavor, so it is recommended to eat it as is with rice or vegetables.

Store in a cool, dark place. *Fermentation continues because it is made without additives. As the temperature rises, the flavor changes easily, so please store in the refrigerator as soon as possible after receiving it.
